Vegan Pancakes
Hi there!
This is my favorite weekend breakfast: these vegan pancakes are easy and quick to prepare so that I can take my time to sit down in those no working days mornings and enjoy them in a calm and peaceful atmosphere.

Ingredients:
1 Cup whole-spelt flour (or whole-wheat flour)
1 Cup still water.
1 Teaspoon baking soda (or baking powder)
Banana
Cinnamon
Maple syrup
Method:
Combine the flour and the baking soda in a bowl until well mixed.
Mix in the water and beat together until batter is smooth.
Let it rest in the refrigerator for about half an hour

In the meantime chop the banana in little pieces.
Take the batter out from the fridge and add in the chopped banana.
Spoon one pancakes’ worth of the mixture onto a hot iron range (you can use a hot oiled frying pan). When bubbles rise through the middle of the pancakes and break on the top, flip the pancakes and cook until browned underneath….


….et voilà, pancakes are ready!
Repeat until the batter is gone, and try not to eat’em all while you’re cooking them
This time I put some slices of banana onto the top, poured maple syrup and sprinkled cinnamon on it. These were delicious, try them!

With this recipe I used whole-spelt flour, which is a type of flour milled from an ancient Italian grain that is similar in taste to barley, but of course you can use wheat flour. The dark color is due to the wholeness.
Every time I cook them I change taste: I put some chocolate chips in the batter or apple pieces or two both of them J ….or I prepare plain pancakes and I eat them with jam or vegan chocolate cream
…..or I add some cocoa powder .. let your fantasy free!!
You also can put sugar (organic cane sugar) in the batter or vanilla flavor or replace water with nondairy milk (soy milk, rice milk, almond milk, & so.).
