M-Oil-free croutons
This recipe is from The Millennium Cookbook by Eric Tucker, the chef of the celebrated Millennium restaurant in San Francisco. In the book recipes, this croutons are served with a delicious onion soup. These croutons are delicious (and low-fat too!)





Ingredients:
1/2 kg stale bread cut in cubes
60 ml water
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon sea salt
Method:
Pre-heat the oven at 170° C. In a bowl mix all the ingredients together.

Place the bread cubes on a large baking pan covered with oven paper, bake for 15 minutes tossing the cubes every 5 minutes, until they’re dry and crunchy.

Let cool at room temperature. Stored in an air-tigth container, they will keep for one week.

Nutritional information for 1/4 cup: 53 calories (17% from fat), 2 g protein, 9 g carbohydrates, 1 g fat, 0 mg cholestorol, 216 mg sodium, 0,5 g fiber
