Fried Sage Leaves
Fried sage leaves are an easy and delicious dish, which can be used as a starter or to accompany an aperitif.

Ingredients:
- sage leaves
- Wheat flour 00
- chickpeas flour
- beer
- extra virgin olive oil
- salt
Preparation time: 20 minutes
Method:
Wash and dry the sage leaves. Prepare a batter not too liquid, using equal amounts of wheat flour and chickpea flour, mixed with beer. Add salt as needed and mix well by removing all the lumps: the batter must be smooth and fluid. Let it rest while the flours get “hydrated” (especially the chickpeas one). In a pan, heat the oil and fry the sage leaves, previuosly passed into the batter. Once cooked, place them on a paper towel and serve.
