Fruit Salad with Surprise!
It looks like a fruit salad, but there’s a trick below…a rice pudding with almond milk!
We had it for dessert, but I think it could be also a breakfast or a hearty snack.

Ingredients:
1 liter of almond milk
150gr of rice
50gr of rice flour
80gr sugar
lemon zest
cinnamon
mixed fruit in season
mint leaves for garnish
Method:
In a small bowl, mix the rice flour with a few tablespoons of almond milk.
Pour the remaining milk in a saucepan with the lemon zest and a piece of cinnamon (I actually used cinnamon powder instead); bring to a boil.
Add rice and rice flour mixture and cook 15 minutes (the time needed for the rice to be cooked). Add sugar, remove the lemon zest and cinnamon; distribute in the pudding cups and let it cool.

Cut fruit into pieces and distribute it over the pudding, garnishing with some mint leaves.
It ‘s almost a complete meal! And, if I’m not wrong, is also suitable for the gluten intolerants.
