Millet and chickpea patties
This was part of Sunday lunch: I opened the cupboard and saw almost nothing but a can of chickpeas, a lot of basic ingredients and some leftovers in the fridge. I felt like having hummus but there was no bread to have it with, so I thought I’d make patties. The result was quite satisfying: delicate and soft, with a hummus-like flavour

Ingredients
1 can of chickpeas
3 tablespoons of cooked millet
2 tablespoons okara
Juice of 1 lemon
2 cloves of garlic
2 teaspoons tahine
2 tablespoons extravirgin olive oil
2 tablespoons chickpea flour
Some leaves of parsley
Salt
Sesame seeds and chickpea flour as batter
Method
Process chickpeas then combine them with millet, okara, lemon, crushed garlic, tahine, olive oil, parsley and chickpea flour. Add salt to taste. Shape the patties rolling some mixture in a combination of chickpea flour and sesame seeds. It is a tricky bit because the mix is pretty soft, you will need to be delicate. Fry them in a pan and serve hot. Enjoy!
