Lemon Soy Bites
Unbelievable but true, I had never tried soy chunks. I do not know why but they didn’t inspire me. Minced soy at will (for sauces and patties), but distrusted the bites.

Some ‘time ago but I remembered the lemon “piccatine” that mom used to make for me when I was little and I thought that bites (even better they would be the famous Mirko’s steaks, which I haven’t found yet
) would well suit this purpose.
Today I finally started the works, as the Sunday’s fridge was a bit tight.
Ingredients:
(serves 2 generous portions)
75 gr soy chunks
a few tablespoons of flour (I used half wholewheat and half white 00)
vegetable broth
the juice of a medium lemon (mine was half a large one)
salt
pepper
extra virgin olive oil
Method:
I boiled the chunks in the broth for about 15 minutes, as instructed, then I drained them and let them cool. I mixed the two flours, I’ve passed ther the bites and I made them brown in a pan, with a bit of extra virgin olive oil until they get well golden. Then I added the lemon juice and I sauté them for another couple of minutes. Excellent hot and cold, my “beast” too had them, and she usually doesn’t like vegetable proteins (except for legumes) and the taste was exactly the same as that of my (alas, far) childhood. We’ve had it together with a simple tomato salad and the timeless Vale’s Sema, which I prepare at least once a week.
