Pumpkin Muffins
with chocolate chips. Although I’m not particularly fond of Halloween as in Italy it’s an imported celebration and an excuse to sell unuseless gadgets… now that pumpkin is in season, I made these sweet muffins that had a great success both in the family and at my daughter’s dance school, where I took them just last night.

Ingredients:
150 gr whole wheat flour
50 gr corn flour foil
40 gr corn starch
320 gr pumpkin (weigh when still raw)
120 gr cane sugar;
4 tablespoons of vegetable oil;
1/2 packet of baking powder;
150 ml soy milk;
50 gr of chocolate chips;
Method:
As with all the muffins, it’s easy. First of all, cook the pumpkin as you like, I usually chop it into pieces and bake in the microwave, it’s ready in 10 minutes. While it cools, sift flours and baking powder into a bowl. Pureé the pumpkin with sugar, oil and soy milk. Combine liquid with solid ingredients, add chocolate chips and mix well. Fill the muffin cups, bake at 180°C and for about 25-30 minutes. Happy Halloween to everybody!

Well, I definitely love pumpkin in any way! These muffins look delicious
I also cook pumpkins and squashes in the microwavw, as they come our perfectly cooked and dry
These are interesting…I just wonder whether the pumpkin inside the dough makes the dough itself heavy, not allowing it to rise..but maybe not, looking at your pics
