Seitan Patties

Generally I prepare them “plain”, but today I wanted to add something more

Ingredients:
(serves 2)
150 gr seitan cut into small pieces
2 tablespoons of oatmeal mignon
2 tablespoons of breadcrumbs
1 spoon of corn starch
1 tablespoon of whole wheat flour
6-7 tablespoons of soy milk
chopped fresh chives, basil, parsley and mint
salt
pepper
oil e.v.o
4 pieces of vegan mozzarella

Method:
Finely mince seitan, oatmeal and chopped fresh herbs. Add gradually soy milk. Put this mixture into a bowl and add starch, flour, breadcrumbs, salt, pepper and mix well. (If you wish, you can also add sesame seeds)
Shape into flattened pellets, make a small cavity in their centre and place there a piece of vegan mozzarella. Then, place a little of mixture over, to contain the mozzarella inside.
Arrange the patties in a baking tray, lined with baking paper, sprinkled with oil, and bake them in oven at 190°C for about 20-25 min. Turn them while cooking so that they can cook on both sides.
