Sponge Cake
Could it be missing? No, it could not … Filled with homemade jam, or with the Vegan hazelnut cream, or soy yogurt combined with fruit and puréed…
Well, the sponge cake: one of the sweetest cake ever!

Ingredients:
150 gr of potato starch
175 gr of flour
25 gr of cornstarch
200 gr of margarine
150 gr of sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
soy milk
1 lemon
Method:
Work margarine and sugar. Add cornstarch and, stirring well, start adding the milk, little by little, keeping on stirring until the mixture gets creamy.
Grate the lemon zest and add it to the baking soda and baking powder, after having mixed together these ingredients, add them to the pastry, mixing well.
Grease a cake tin with margarine, and pour the mixture in.
For the mold, you can choose the classic cake tin wih the removable base, if you want a round cake; or you can line a rectangular cake tin with baking paper if you want to prepare a “sheet” of sponge cake, that you’ll fill and then roll up.
Bake at 180 degrees for about 20 minutes.

Hi Maria! The quantity of milk depends on the potato starch, the flour and the corn starch – you should keep adding soy mil until you get a creamy mixture. Should be in the region of 150-180 ml. But keep adding it very slowly stirring the mixture continuously, and then… Let us know how it came out!
