Happy VegBurger
This is the gorgeous dinner that me and Luca have prepared !! So much better than ready made meals …. these vegburger were a joy for our palate!

Ingredients:
beans (do not know exactly the quantities as I had frozen them a long ago …)
chickpeas
black olives
breadcrumbs
salt
garlic
chili
sesame seeds
corn flour
salad
tomatoes
vegan mayonnaise
Method:
It’s really simple. I cooked chickpeas and beans. Once done, I puréed them along with black olives and garlic. I added some bread crumbs, extra virgin olive oil, salt and pepper, and I mixed it all. At this point, I made the super burger, passing them in the breadcrumbs, together with a little corn flour and sesame seeds.

I preferred to bake rather than fry them… therefore, I put them in the pre-heated oven at about 180°C until they became golden and crispy (but not too much!) …
Once cooked I made the burgers …
As a bread I used some vegan rolls, which I slightly warmed in the oven and stuffed with salad, vegan mayonnaise (following Concita’s recipe ..) and delicious cherry tomatoes!

In the plate along with VegBurger … Grandma’s radicchio… cucumber, tomato and carrot salad and baked potatoes with garlic, sage and rosemary!
