Roasted Seitan+Cranberry Sauce
Hi there! This recipe isn’t really particularly new… and I have to say, not being American, I don’t celebrate Thanksgiving Day. But the sauce was delicious (as was the seitan, actually
) and it might be a good idea for Christmas…which is only 30 days from now!

Ingredients:
(serves 2)
250 gr of seitan (mine was homemade, as per this recipe... actually this is different as it was made with white flour, but the method is still the same)
rosemary
sage
marjoran
oregano
extra virgin olive oil
balsamic vinegar
for cranberry sauce:
300 gr of fresh cranberries
1/2 glass of water
2 tablespoon of sugar (or more, depending on your taste)
1 orange
1 teaspoon ground cinnamon
2 cloves
1/2 teaspoon ground nutmeg
Method:
Drizzle a baking pan with olive oil and balsamic vinegar and sprinkle with rosemary, sage, marjoran and oregano. Lay your seitan and put it in the preheated oven, 25min at 160°C. It will form a nice “crust”, crunchy and tasty
.
Now, let’s prepare the sauce. In a saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, cinnamon, cloves and nutmeg. Cover, and simmer for 20 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.
And that’s it! Remove the seitan from the oven and serve it, still hot, accompanying itwith the cranberry sauce.
