“Transformist” Tofu Pudding
Who knows how many times you did it and how many versions, but I liked this last experiment so much that I wanted to post it ![]()

Ingredients:
(makes 4 small puddings)
100 gr of tofu
2 tablespoons of soy yogurt
2 tablespoons of fructose or sugar
saffron (to give the puddng a nice yellow colour)
1 teaspoon of vanilla sugar (or a pinch of vanilla)
200 ml of rice milk
1 teaspoon of sugar
1 teaspoon of agar agar
Method:
Whisk tofu with yogurt, saffron, fructose or sugar and vanilla, until creamy.
Dissolve the agar agar in milk and add a teaspoon of sugar. Bring to a boil for one minute, turn the heat off and let it cool for a minute longer. Pour the milk with agar agar into the tofu based cream, stir and mix well.
Pour it into molds and refrigerate.
You can serve with fresh fruit, and caramelized sugar
But… why “transformist”, you ask?
Because, if you suddenly need a bit of cream or you don’t feel like having the pudding anymore, whisk it and you’ll get a light cream, delicious!

Can be used as a filling for a tart, or served with a slice of soft cake, or with fruit … it’s really good!

My girlfriends sometimes (specially in summer) prepares tofu-based sweets and desserts for me, maybe she could be interested in this. Looks delicious!
