Chick peas and tofu frittata.
Hi there! I admit, this recipe is an experiment .. and I photographed only after having tasted it … it’s delicious!

Ingredients:
250 gr of chick pea flour
800 ml of water
100 gr tofu (you may vary the quantities according to your taste …)
a sprig of rosemary
organic corn oil
nutmeg
sesame seeds
black pepper and salt
Method:
Prepare all the ingredients. Combine flour with water, trying not to form lumps, stirring constantly. Cut the tofu into small cubes and add it to mixture. Remove the leaves from the sprig of rosemary and chop them into small pieces, then add them to flour. Finally, combine the rest of the ingredients to the mixture, nutmeg, black pepper and half a cup of corn oil. Grease a baking pan and pour in the mixture, which will be quite liquid. Preheat oven to 220°C and bake for 40 minutes. Turn the oven off and add the sesame seeds. Then, turn the grill on for 15 minutes, or at least until the surface of or until FariMara is of a nice brown color.
Once done, sprinkle with salt and black pepper, and serve as you like.

Looks delicious! I have problems in digesting chickpea flour, therefore I soak it at least half an hour before using it… best would be overnight anyway.
Hi! I knew frittata made with chick peas flour (you can also make it with gram flour, btw), but this is a delicious variation! Tofu certainly makes it lighter and softer. Yummy!
