Orange & Cinnamon Cake
Here it is a very Christmassy cake, with a delicate and distinctive flavour!

Ingredients:
300 gr of self raising flour
200 grams of potato starch
200 gr of margarine
2 tablespoons of cinnamon
juice of 2 oranges
a few flakes of grated orange zest
soymilk as needed
1 teaspoon of vanilla extract
80 gr of icing sugar
for the topping:
homemade orange marmalade as needed
icing sugar
some strips of orange zest
Method:
Place flour, potato starch, softened margarine, vanilla, cinnamon, orange zest and juice in a bowl and start mixing everything.
Add soy milk, gradually, to soften the mixture and stir until it gets homogeneous, without making it too runny. Finally add icing sugar and mix well.
Bake at 180°C for 20 minutes … of course, calculate the time according to your oven.
Once the cake is ready, let it cool.
With a knife, cut a hole in the center, not too deep, say at least 5 cm (but you can do to your liking), remove the excess of cake and put the jam there (which I have previously heated in the microwave for 30 seconds, to make it softer).
Before putting the jam, you can sprinkle the surface with icing sugar, as you like.
Once you put the jam, place some orange zest and your cake is done!!

Mmmmhhh, that’s delicious!!! I think I’d put the jam inside as well…I mean, I’d cut the cake in two halves horizontally. Must be soo good!
