Tasty Seitan
A delicious way to prepare seitan very quickly! Yesterday I came home quite late, I opened the fridge and I “create” this one! Aubergines are not in season, but I had bought them as I had to prepare baba ghanoui, which then I hadn’t done… and they were “dying”.

Ingredients:
(serves 2)
1 large aubergine
200 gr of seitan
2 bay leaves
1/2 glass of (vegan) balsamic vinegar
2/3 cloves
2/3 sage leaves
salt and pepper to taste
extra virgin olive oil
Method:
Cut the aubergines in wedges and place them in a sauce pan. If you want to make them more digestible, you can cut and place them in a colander and sprinkle with salt; rinse after 30 minutes. I didn’t have enough time and I skipped this step… and I didn’t have any problems, but it really depends on your stomach! After 7/8 minutes I added the seitan as well, diced. I added a bit of vinegar, bay leaves, cloves and leaves. I kept cooking until aubergine and seitan were done, adding vinegar when it was getting too dry. Towards the end I also added a bit of salt (not that much as the dish is savoury itself) and white pepper. Should you wish, you can also add a little of olive oil. It was very tasty, a surprise!















Must have been deliciuos! those white-ish bits seemed sesame seeds…which could be good with the dish
