Pastèis de Belèm
These are typical cakes from Lisboa, my brother , who tasted them, suggested me to try and do them. So I veganized them. Basically, I haven’t done anything, as I always prepare cakes at about one in the night, when I stop working with no energies….

Ingredients:
1 roll of vegan puff pastry
veg custard
cinnamon
sugar
cane sugar
Method:
Roll the dough out, prick and cut it into disks, 10 cm in diameter. I placed them in the muffin tray, to give the right shape (otherwise you need the molds) and I sprinkled some brown sugar over… Meanwhile, prepare the custard and fill the cups made of puff pastry (do not overdo…!). Bake for 20 minutes at 200°C until the custard on the top gets golden and slightly singed: P

Remove from the oven and sprinkle them with plenty of icing sugar and cinnamon, eat while still hot … a sheer bliss!!!
The following morning, with a fresh mind, I remembered I had some berries in the fridge … so I put them in a pan with sugar and I made a syrup, with which I iced the remaining pasteis and… Oh My God! They were in fact incredibly good, while taking the photos I couldn’t make it, I had to stop and have three of them … now I dream of them even in the night … I think I’ll just make them again today
here they are, with berries (I hope people from Lisboa don’t mind)
argh!

And now, I also show you my lunch … I finally tried lasagna with soy based ragout! a bomb! The recipe isn’t secret, so I just show the picture:
