“Vegrino” in red

Well, it’s just another way to dress the “vegrino” vegan cheese! πŸ˜‰ In these coming days I’ll be trying more “vegrinos”…
I let you all know if I succeed! πŸ˜‰

Ingredients:
1 vegrino
table salt
lemon juice and grated rind
white, green, black and rose pepper mix
strong paprika
hot chilli aromatic extra virgin olive oil

Method:
As usual, prepare the vegrino with 200 g naltural soy yogurth and leave it the fridge for 5 days (or 4, it will be ready anyway), please read here for further details on how to prepare a vegrino cheese: “Vegrino in green”.
Once ready, prepare the dressing this way: put the vegrino on a plate, sprinkle with salt and peppers mix, then pour some drops of lemon juice and add a touch of its grated rind. Meantime mix in a bowl strong paprika, hot chilli extra virgin olive oil (homemade, in my case) and some more drops of lemon juice. Stir it all until gets perfectly mixed and then pour the hot sauce on the vegrino’s top. Decorate the plate with chives or whatever! πŸ™‚


We had it with broccoli and creamy red bean… fantastic! πŸ˜‰

    Hi Anto! It’s always such a pleasure to read you! I very much liked “green vegrino”, but I have to tell, If I was asked which one I prefer… this would definitely win!!! We love chili and pepper, specially if freshly ground and mixed!!
    I definitely look forward to reading the other versions!!

    No idea what vegrino is but it looks good! I just had to Google it (might be an idea to share a link in with the recipe?) as I have only just started following your blog and wading through Italian Google translations is a bit of a pain. Could we please have a link to the recipe for vegrino in your posts? Pretty please? πŸ˜‰
