Lively Leaves
Savory sauce, well suited to accompany crunchy raw vegetables!

Ingredients:
for the sauce
2 handfuls of parsley
1/3 of head of a lettuce
two handfuls of green olives
1 tablespoon of capers
2 teaspoons of paprika
3 teaspoons of horseradish powder
extra virgin olive oil from olives in oil, as needed
to accompany:
artichokes
lemon
sauerkraut white cabbage
carrots
walnuts
pistachios
carrots
Method:
Soak olives and capers for a few hours, often changing the water, so that they get out of salt. Then mix all the ingredients with a hand blender.
To accompany the sauce, I recommend you to prepare an artichokes carpaccio, let rest in water and lemon for a while; or cabbage “boats “, stuffed with thin strips of carrots and chopped walnuts or pistachios.
