Pumpkin Hearts

Basically a complete meal, heart shaped for Valentine’s Day!

The dish itself is very basic and simple, but looks great and is nice as you can have it taking the hearts with your hands (and maybe feeding each other!).

Ingredients:
for the dough:
250 gr of whole wheat flour
50 gr of wheat germ
5 tablespoons of extra virgin olive oil
120 ml of beer
for the filling:
250 gr of pumpkin
2 handfuls of lentils
1 clove of garlic
1 pinch of zaatar (made of sesame seeds, cumin, coriander and summak)

Method:
In a large bowl mix flour and wheat germ; add oil and slowly add the beer, until the dough gets smooth, not sticky and quite elastic. Let it rest in the fridge at least an hour, but the more the better. Can be be prepared the day before and left it in the fridge, wrapped in a cling film …
For the filling, clean and cut the pumpkin into cubes. In a pan, fry the garlic, crushed or sliced very thin, depending on whether you want to remove it later or not. Add the pumpkin and the two handfuls of lentils, also adding about a cup of water. Cook for about twenty minutes, until the water has evaporated almost completely, and lentils are almost reduced to a pulp.
Roll the dough out with a rolling pin and cut out many pieces with a heart-shaped mold (or other); place the hearts on a baking sheet. Place a tablespoon of pumpkin and lentils on each heart. Place a second piece over, to close, and press lightly on the edges.
Should be baked at 200°C for about 20 minutes. You should have some pumpkin with lentils leftover, which can be used to accompany and garnish the little hearts.
If you let them cool, they’re a great finger-food!
