Cantucci
This morning I managed to find a second to cook something, these two weeks in Hamburg have been pretty challenging, but the restaurant is finally ready! We’ll open Friday, and I’m already in a flaaaaaaaaaaaaaap!
Here in Germany they’re freak with Cantucci, so today I decided and tried them, they came really well! Clarissa passed me this recipe, which I have slightly modified based on what I had at home.

Ingredients:
300 gr of allpurpose flour
30 gr starch / cornstarch
100 gr of soya butter
vanillin
almonds (I also put some hazelnuts), I haven’t weighed them but the recipe calls for 150 gr
150 gr of sugar cane
1 teaspoon of baking powder
soya milk as needed
a pinch salt
Method:
Very simple: mix all the dry ingredients, add butter and mix, adding milk until the dough is quite compact. Then add the almonds (I’ve left them whole) and form 3 loaves. Bake at 180 degrees for 20 minutes, then remove from the oven, cut ‘em and place in oven again, 7 minutes per side.
Allow to cool and scoff them!

So good!!! A taste of Tuscany
Yep, Ascanio’s right… Cantucci (or Cantuccini) come straight from Tuscany! And, being quite hard (at least the original ones, I mean) they should be dipped in Vinsanto, a sweet dessert wine. And they’re simple but really good. Happy to read a vegan version of ‘em then!
