Quinoa Milk
Well… we had run out of soy milk, we had plenty of quinoa… we had to try it! It came out really good, maybe a little too dense (but you can always dilute it, of course).

Ingredients:
1 cup of white quinoa
1 pinch of salt
sugar or other sweetener to taste (we used unrefined cane sugar)
2.5 cups of water to cook the quinoa
1.5 liter of water for the milk itself, but it depends on how thick you want it
Method:
Wash quinoa several times. This is, I read, to remove the saponin, which is a bitter coating. Now, place the quinoa in a bowl and cover it with water. I left it there an hour, but you can leave it up to 12 hours. Anway, passed that time, wash it again, discard the water and cook it. The ratio is 1 cup of quinoa: 2 cups of water. I put 2.5 as I wanted the quinoa to cook really well – well, to become a pap, actually. Add a pinch of salt and let it simmer, say, 30 min. Let it stand for 5/10 min and tranfer the quinoa in a good food blender. Add the water (as I said, at least 1.5 liter) and blend it well. Add sugar, blend again and check if it’s sweet enough. Now: I didn’t sieve it, but you may want to – do it so with a clean kitchen cloth, but I have to say, my milk really didn’t need straining.
Transfer it into a glass jar with a lid, close and keep it in the fridge, I think it keeps well at least 4/5 days. Just stir a bit before using. And that’s it!

Yep! It’s definitely cool, and pretty easy to do, I have to say. Thick and tasty, but actually I find it pretty easily in almost every health shop… not cheap though, so that’s why I’m so happy about this self production
I have yet to see it out here… Maybe some halth food stores have it, just not in our area… but it’s definitely cheaper to make your own. Thanks for sharing!
p.s.: I wonder how it would fare in a chocolate shake…
