Spanish Chickpea Tortilla
I have been thinking about preparing this recipe in vegan version for a long time… and here I am, triumphant since the final result was, in my opinion, 100 times better than the original recipe.
Excellent both warm and cold the day after as a lunchbox, perhaps with vegan mayonnaise between two slices of bread.
For the doses, well they’re just a rough indication…
Ingredients:
350 gr (about) chickpea flour
water as needed
3 potatoes cut into slices
1 handful of fresh or frozen peas
1 onion
1/2 teaspoon of cumin
3 peppers
2 tomatoes
3 tablespoons extra virgin olive oil
salt as neede
Also, the recipe calls for some zucchini or other vegetables, but I managed to find only peppers.
Method:
Mix chickpea flour and water… I haven’t specified the amount of water as I go “by the eye”, I stop when the consistency is not thick anymore but quite liquid. You can check the instructions easily found on the packaging of chickpea flour.
Add the ground cumin and a pinch of salt, and let the batter stand for 3 or 4 hours.
Cut peppers, onion and tomato into small pieces. Sautè them in a pan for 10-15 min with about 3 tablespoons of oil and peas.
Passed 4 hours, add the vegetables cooked in a pan and the boiled potatoes, lightly salted, to the mixture of chick peas.
Lightly grease a baking sheet. Spread the mixture evenly and bake it in preheated oven at 190°C for about 30-35 min.
I suggest you not to have it freshly baked, but to wait at least 15 min to avoid it getting broken. Ideally, to capture all the flavors, you should eat it lukewarm or cold.

Sounds lovely!!! I was wondering, could I do it on the stove on very low heat or do you think it still wouldn’t cook through?
Well… I think it all depends on the thikness you know… you can give it a try really
