Leek and Cedar Pesto
Yes, I know, the combination sounds terrible, but I promise you that is good, as long as you love strong flavors, since I used raw leek (which is not exactly a delicate taste
).
I used cedar as I had bought and wanted to use it, but you can use lemon as well. Otherwise, you can omit the acid ingredient and make a simple leek based sauce … You choose ![]()
Doses are for one.
Ingredients:
for the pesto
the two outer leaves of a leek
5 nuts
half a clove of garlic, core removed
2-3 sprigs of fresh thyme
a piece of cedar (about 20 gr)
lime zest
salt and pepper
Method:
Really simple: beat the walnuts first, add the other ingredients and beat again. Add a drop of water, as needed.
I didn’t add oil as there were walnuts already, but certainly it would suit very well:-D
I cooked pasta, drained and mixed it with pesto without heating.

Comment:
I accompanied the pasta with the remaining leek and some zucchini, cooked in a pan with a bit of water. I added some cedar zest marinated with oil and salt… delicious! ![]()
A suggestion: of course, I haven’t used all the cedar zest, but I haven’t discarded it. Just grate or cut it and store it in the freezer: it will be great to flavour donuts! ![]()
Be careful: This pesto is very particular and I really liked it, but my boyfriend didn’t, at all ![]()
You must love “garlicky” tastes and raw leek.
