Vegetable Quiche
From this week onwards, my mother will often come back home late from work, due to an unexpected transfer… So every night I’ll prepare something for her
and tonight she enjoyed this successful experiment! ![]()
I decided to call it “quiche” as it very much looks like the traditional French quiche lorraine (except for the bacon…)

Ingredients:
1 roll of vegan puff pastry
grilled vegetables (pan-fried with extra virgin olive oil and rosemary)
200 ml of vegetable cream
3 tablespoons of chickpea flour
3 tablespoons of water
salt
Method:
Preheat the oven to 180°C.
Place the puff pastry on a baking sheet and lay the vegetables on the surface.
Stir cream, chickpea flour, water and salt (to taste) with a whisk and pour the mixture over the vegetables, taking care to spread it well onto the base.
Bake until the pastry gets golden.

Hi there, I very much like preparing tortillas or similar stuff with chickpea flour, sometimes I also use lentil flour, or a mix of both. This quiche looks great!
