Chickpea Mini Tortillas
I asked my mom to make chickpea flour for us with the Thermomix (waiting for ours to arrive!). An abyss in flavour and texture, compared to the one you buy, ground who knows when …. I wonder what a marvel would come out with the stone mill!

Ingredients:
1 cup of chickpea flour
1 cup of water
1 / 4 cup of beer
1 teaspoon of salt
black pepper
oil
Method:
I prepare the batter the night before. I pour flour, salt and pepper in a bowl, I get a whip and I pour very slowly water and beer, stirring at the same time (so to avoid lumps). In the first two hours I give a stir every now and then, then I let it sit in a cool place. As for cooking, oil well a nonstick pan, you’ve got to do this for each tortilla, and let it cook for a few minutes, turning it upside down. Ready!
Comments:
I got about 5, I did them nice and thick.
The flour prepared with the Thermomix is a bit rustic, coarse.
The cool is necessary, as the batter could get sour.
I had the tortillas cut in wedges with a big salad. They’re a great idea for an appetizer.

We’ve got something similar to Thermomix, actually it’s called Vitamix – doesn’t cook but grinds, mash, liquidize, mince everything you give it… we tried lentil flour, I agree with you, the result is amazing! Now we’ve got to try with chickpea flour and make these egg-free pancakes – omelettes
