Battered Potatoes
A dish of my childhood, veganized, that I my beloved grandmother used to prepare for me.

Ingredients:
8 boiled potatoes, cooled (cooked in salted water)
1 cup of chickpea flour
2 tablespoons of all purposes flour
cold water, as needed
breadcrumbs, as needed
oil for frying
Method:
Prepare the batter by mixing chickpea flour, all purpose flour and water (use a whisk). Must be thick. Let it to rest for 45 min in a cool place.
Meanwhile, cut the potatoes into slices, about 8mm thick, pass in the batter, roll in bread crumbs and fry them in hot oil.
They’re excellent hot or cold, so they can be prepared in advance and be served as an appetizer during an apertif. You can also replace water with beer, vegetable milk or broth, to your taste!

easy and quick… I wonder how they’d come out with sweet potatoes…
