Ginger and Cinnamon Cookies

Ingredients:
100 gr of all purpose flour
50 gr of margarine
2 tablespoons of rice malt
2 tablespoons of brown sugar
1 teaspoon of ground ginger
1 pinch of cinnamon
1 teaspoon of baking powder
Method:
In a saucepan put sugar, margarine, rice malt and and combine them all stirring over a very low heat; let it cool a bit. In a bowl, combine the mixture you’ve got with flour, cinnamon, ginger and baking powder. Knead until you get a soft dough, roll it with a rolling pin to a thickness of about 1 cm. Cut out the biscuits with a cookie mould (my daughter wanted to make them heart-shaped, but I didn’t have the mould and used a coffee cup). I placed them on the baking paper. Place them the top shelf of the oven, already preheated to 180°C, for 10 minutes.
