Blueberry Brownies
Here I am, back with a recipe inspired by one of my favorite vegan books (Moskowitz Veganomicon IC & TH Romero)! Each dish is perfectly described, and no recipe disappoints! It’s a pity there aren’t photos of each recipe (the existing pictures are very inviting though!) and that not all the ingredients can be found here … at least where I live… but just a bit of inventivness and you can make it !

Ingredients:
2 / 3 cup + ½ cup of dark chocolate
280 gr of blueberry jam
¼ cup of soy milk
¾ cup of brown cane sugar
½ cup of corn oil (or other neutral-flavored oil)
2 teaspoons of vanilla flavour
1 ½ cups of cake flour
¼ cup of unsweetened cocoa powder
¼ teaspoon of cream of tartar
½ teaspoon of baking soda
¼ teaspoon of salt
1 cup of fresh blueberries
Method:
Preheat oven to 170°C.
Melt 2/3 cup of dark chocolate in a baine-marie (the rest will be reduced in flakes and added later). Once melted, let it cool a bit.
In a large bowl, combine jam, soy milk, sugar, oil and vanilla flavour and stir until becomes a smooth paste.
Add sifted flour, cocoa, baking powder and salt and mix well, so that it’s nice and smooth. Add the melted chocolate; then, the remaining chocolate, reduced to flakes, and fresh blueberries.
Spread the mixture on a baking sheet, oiled or lined with baking paper, wet and squeezed.
Bake for 45 minutes. Remove from the oven and let it cool. Cut it into squares (I got 15 – 3×5, but of course depends on the kind of baking sheet you use). Serve warm, or better cold.
Comments:
Maybe you could slightly decrease the amount of oil, as the cake is super soft anyway! But, it’s up to you…prepared this way, never disappoints and nobody believes is 100% vegan! ![]()
The photo was taken before accompanying the brownie with vanilla ice cream and fresh blueberries, heated with a bit of sugar, creating a kind of a syrup… a super successful match! (You know, not being an expert at taking photos, it takes a while to immortalize the dish, and I was afraid it would melt …:-( ).
