Unusual Brunch
Sunday morning … we woke up late! Too late for breakfast, too early for lunch, but so much hungry! What to do? Then I’ve got a nice idea, a little brunch, mouth-watering, nutritious, healthy. This is how this mix was born, I must say we really liked it, accompanied by a beautiful huge smoothie of fresh fruit!

Ingredients:
(serves 2)
100 gr of pre-cooked couscous
1 banana
mixed dried fruit (I put walnuts, almonds, unsalted pistachios, raisins, dates …)
2 tablespoons of cherry jam (but use the one that you like best)
a sprinkle of ginger
mint leaves (I had to use the basil to decorate, I didn’t have mint sigh!)
strawberries to decorate (and to eat …)
Method:
Soak the cous cous following the instructions on the package. Let it cool. Meanwhile, blend the banana with the mix of dried fruit, until it gets thick and creamy but not too much. Get two tablespoons of jam and dilute it in two inches of water in a pot, to make it more fluid. Shape the cous cous in a disk. Place the jam on the side, and the creamy sauce on top of it (I used a cookie mould, which I filled with the cream). Decorate as desired. Eat alternating a little of cous cous, a bit of jam, and a little of cream. You won’t believe it, but it’s really good, I thought it might be a good dish for a cold buffet! … Have a nice brunch everybody!
