Pear and Hazelnuts Strudel

Ingredients:
for the dough
200 gr of wholegrain spelt flour
1 / 2 cup of water
50 ml of extra virgin olive oil
1 tablespoon of brown rice malt syrup
for the filling
2 pears
ground hazelnuts
1 tablespoon of hazelnut butter
1 tablespoon of brown rice malt
raisins
ground cinnamon
Method:
Combine the flour with all the other ingredients, previously mixed. Work the dough well and let it rest. Meanwhile, cut the pears and mix them with ground hazelnuts, raisins and cinnamon. In a small bowl, combine the hazelnut butter with malt. Roll the dough out and spread the cream on it, and add the pears over with the rest of the ingredients. Roll and close it by joining one end to the other and bake at 180 degrees for 25 minutes. Very good and sugar free! Unfortunately I couldn’t make it last long, but long enough to take this photo.
