Yogurt Short Pastry

Ingredients:
200 gr of semi-wholegrain flour
125 gr of vanilla flavoured soy yogurt
50 gr of sugar cane
50 gr of potato starch
50 gr of light extra virgin olive oil
2 teaspoons of cream of tartar
1 teaspoon of baking soda
zest of 1 large lemon
salt
Method:
Combine dry ingredients very well; form a well and add the liquid ones in the centre of the well; start mixing with a fork. As soon as the ingredients are blended, keep kneading with your hands on a floured surface. Let the dough rest in the fridge for half an hour, then remove it from the fridge; roll the dough out, not too thick, and cut the biscuits the shape you prefer. Bake at 175 C degrees for 10 minutes. Excellent also as a base for cakes and filled pastries.
Comment:
Of course, you can replace vanilla flavoured yogurt with plain, comes out equally good. In this case, however, I recommend adding 1/2 teaspoon of vanilla powder and slightly increase the dose of sugar.
