Pumpkin + Chocolate Plumcake
Good day to everybody! I would like to propose you a “super cuddling” cake with lots of chocolate, maybe not the best for blood sugar, but in rainy days, like these, where you’re not busy, is the top, (to be enjoyed in pajamas, on the couch, maybe with a cup of veg milk or tea).

Ingredients:
1 + 1 / 2 cup of white flour (I used 1 cup of white and 1 / 2 of brown)
1 tablespoon of baking powder
1 / 2 cup of brown sugar
1 cup of cooked pumpkin
50 gr of mixed seeds oil
1 cup of rice milk (or soy milk)
100 gr of dark chocolate
1 teaspoon of cinnamon
1 pinch of salt
Method:
First, cook the pumpkin as you like, I steam cooked it. Let it cool a few minutes, then place the pulp in a bowl and mash it with a fork, as best you can. Add to the bowl: flour, sugar, baking powder, cinnamon, salt. Mix well, then add oil and milk, a little at a time (if you think a cup is not enough, add more, the mixture should be soft and smooth). Chop the chocolate in chips and incorporate them in the mixture. Grease a plumcake mould with olive oil, sprinkle with bread crumbs and pour the mixture in. Bake in preheated oven at 180°C for at least 30-35 minutes (be careful the surface shouldn’t darken too much: in that case, cover with aluminum foil and keep baking). Let it cool completely before serving (if you resist!).
