Soft Spicy Pellets
Beans, cauliflower, fennel, daikon, winter salads, apples, pears, potatoes… too much white on my table these days! It’s time to colour my dishes a little.

Ingredients:
1 / 2 bowl of leftover cannellini beans
1 handful of oatmeal
coloured spices and seeds (here: turmeric, paprika, poppy seeds, sesame seeds)
Method:
Mash the leftover beans with a fork and add salt to taste. Add a handful of oatmeal, stir and let the mixture stand for one hour, so that the oat will absorb the excess of moisture from the beans, and will thicken a little. Then, shape the pellets with your hands and roll them in the spices.
