Sweet Crêpes
These are my first crepes, vegan version, so no eggs of course. I would have never thought I would have been able to make them first time round, and yet here they are here. But then I have a question… If you can do everything without eggs, why are they used for anything?
I haven’t weighed the ingredients, except for the flour! ![]()

Ingredients:
100 gr of wheat flour
1 pinch of salt
1 pinch of sugar cane
coconut flakes
extra virgin olive oil
rice milk, to taste
hazelnut butter
puffed rice
raspberry jam
unsweetened cocoa powder
Method:
In a bowl, mix flour with salt, sugar and coconut. Add milk and a dash of olive oil, gradually, stirring to get a liquid mixture. Let it rest the fridge for half an hour. Then, heat a skillet for crepes, and when it is pretty hot, pour in a small ladleful of the mixture, trying to form a circle. When it is done on one side, turn it and cook on the other side, briefly. Keep doing this until the mixture has run out. I stuffed some of them with raspberry jam, and the other ones with hazelnut cream and puffed rice. I folded them in four, and sprinkled with coconut, cocoa and sugar cane. Have a nice day you all!
