Mint Chocolate Muffins
Just back from London, where I used to have my breakfast in place called “The Muffin Man”, I mainly regret not having tried the fragrant mint-chocolate muffins, as they were not vegan. Hence, I attempted a vegan version, achieving a mouthwatering result!

Ingredients:
1 cup of kamut flour
1 cup of mint infusion
1/2 cup of cane sugar
1/3 cup of corn oil
2 tablespoons of dark chocolate powder
3 tablespoons of potato starch
1 tablespoon of cream of tartar
a pinch of salt
dark chocolate chips
Method:
Mix the flour with cane sugar, dark chocolate powder, salt and potato starch in a bowl. Add little by little a cup of mint infusion, previously prepared and cooled down, together with corn oil. Dissolve a tablespoon of cream of tartar in a bit of water, and add it to the mixture. Once the consistence is smooth you can fill your muffin moulds with the the mixture you’ve got, decorating each of them with a few chocolate chips on top. Finally, bake your muffins in the oven at 180°C for about 40 minutes. Enjoy!

not particularly fond of choco+mint, the “after eiht” taste I mean, but these muffins look gorgeous
