Raw Truffles

This is a a recipe I made quite a bit of time ago, during a completely raw-food week. I liked them a lot, so I decided to share them here as well.

Ingredients:
(makes 25-28 truffles)
1 cup of brazil nuts (135 gr)
1/4 cup + of 1/2 cup of oatmeal (70 gr)
1/6 cup of coconut oil (maybe I have been tight, say 20 gr)
1/6 cup of agave or rice malt (65 gr approx)
brown sugar, to taste
ground cinnamon, to taste

Method:
Grind 25 gr of oatmeal (1/4 of cup) in a blender, to get a sort of flour. Then, add the brazil nuts and blend until the mixture gets a bit crumbling (in a other words: a bit of natural fat from the nuts must come out. You’ll see it from the change of colour and texture of the ingredients: at the beginning it looks like a flour, and as as you keep blending gets darker and starts compacting slightly). Pour it into a bowl, add the remaining 45 gr of oat flakes (1/4 of cup), the agave syrup and coconut oil, softened. Mix well and shape it into balls. Roll them one by one in a mixture of sugar and cinnamon and place in fridge to rest.

Nutritional information per 1/4 of it: 412 calories, 7 gr protein, 32 gr carbohydrates, 29 gr fat.
