Chocolate + Pears Muffins

Hi there! Today I prepared some muffins and changed a little bit my usual recipe, which calls for a banana – but I didn’t have it, so I replaced it with pears, and then I gave a different twist to their surface.

Ingredients:
230 gr of flour
180 gr of sugar
1/2 cup of vegetable oil
1/2 cup of soy milk (or rice or almond milk, to taste)
1 teaspoon of vanilla extract
1 pinch of salt
2 small pears (puréed)
1 tablespoon of potato starch, mixed with 2 tablespoons cold water
1 tablespoon of baking powder
1/2 teaspoon of soda bicarbonate
2 tablespoons of unsweetened cocoa powder
chopped hazelnut, to taste, on the surface

Method:
It’s very easy: just mix all dry ingredients (ie flour, sugar, vanilla, salt, baking powder, baking soda and cocoa) in a bowl, and all the liquid ingredients in another bowl (oil, milk with pears and crushed into starch dissolved in water). Now, pour the dry ingredients into the liquid, stir quickly and do not worry if the mixture will be lumpy – it’s even better. Pour the mixture in the muffin cups up to 3/4 and then some chopped hazelnuts on their surface.
Place them in oven, preheated to 190°C , and bake for 20-25 minutes, always make the toothpick test.
If you want them even more delicious, put a dice of dark chocolate inside. 😉 See you next time!
