Veg Raw-Cheese

A delicious all-raw vegan cheese that will winn your table! 😀 Forgive the picture quality, but today the weather was quite bad and the light has suffered from this…

1/2 cup of almonds
fresh mint, to taste
other flavors atyour will
1 teaspoon of water

Easy peasy! 😀 Put the almonds in the freezer in advance for at least 4 hours, so they will get cool just enough not to affect the grinding phase. Then, grind them along with the herbs, and – once you’ve got a very fine flour – add a teaspoon of water. It will form a quite soft mixture, malleable. Personally, I suggest to prepare it in the evening for the next day, so that the aromas can give all their delicious flavuor! Obviously, you can enjoy it with a salad or as a delicious pâté for your sandwiches. Can be spread quite easily! 😉

I am infinitely grateful to Patrizia of CacaoPuro, who – through her recipes – is a constant source of inspiration for raw foods. She proposed a version of it made of cashews and basil, and wanted to propose a more delicate version, made of mint that grows abundantly this spring on my balcony.

interesting, always liked to try vegan “cheeses”. also, this one I understand it’s raw, which is even more interesting
