Lentil mash

I think this is a nice alternative to mashed potatoes to have with a seitan burger or sausage.RedlentilmashResize
Ingredients:

1/2 an onion
1 carrot, finely chopped
2 sticks of celery
60 g sweetcorn
handful of parsley
150 g red lentils
275 ml veg stock
oil or margarine

Method:
Blend the onions, carrot, celery, sweetcorn and parsley until smooth. Fry them in the oil or margarine for around 10 minutes. Add the lentils, stock and seasoning and simmer for around 30 minutes, stirring every now and then. Stir in more margarine if you like.

    Excellent idea! I have been looking for mashed potato subs with our coming winter rapidly approaching and cauliflower is ok, but this looks amazingly promising. Sort of very thick dhal that could be used not only as a filling side to balance out the rest of the meal but also as a protein hit. Love it! And so versitile. Thank you for this great idea 🙂
