Real Vegan Parmesan Cheese
You will often come across recipes on Veganwiz.com that require the use of “Real Vegan Parmesan Cheese”, but what is it exactly?
It is a basic and extremely versatile ingredient that can be used to add texture and character to pastas, rice, flans, sauces and stews. It can easily be stored in an airtight container and if your dish is tasty enough, very few will notice that this is not a dairy product.
Ingredients:
peeled almonds
fine sea salt
Directions:
Grind the almonds together with the salt until you have reached the consistency you desire.
Please note:
If you cannot find peeled almonds at your local grocery, you can easily do this at home. Simply blanch them for a few minutes and their skin will come off before you can say Jack.
There are many different recipes out there that include the use of nutritional yeast flakes though we prefer this version as it’s much simpler and seems to go well with all types of dishes.
Tip:
Thanks to its versatility it can be added to gratins too, but please make sure the temperature of your oven is not too high as it can burn easily because of the oils contained in the almonds.
I usually add some nutritional yeast for a more cheesy flavour 🙂
I add yeast, too, and some of line seeds, for omega 3.

When I used it for the first time my husband couldn’t believe it was “only” almonds! I was cooking something (I don’t remember exactly what, I think some vegetables…) in the oven and it was smelling so good at home!
