Bean burgers
The name was suggested by my boyfriend who arrived just in time to eat the last ones.
Ingredients:
A can of beans
20 black olives
Breadcrumbs to mix
Wholemeal flour to dip in
Salt
Pepper
Oil
2 table spoons margarine
Half cucumber to decorate
A tuft of parsley
Directions:
Strain the beans off reserving a bit of their liquid, add chopped olives, a bit of oil and a pinch of salt and pepper.
Mix everything with an immersion blender and adapt consistence with breadcrumbs if the mixture is too thin.
Form some balls, give them a patty shape and dip them with flour. Melt margarine over low heat and fry burgers about 3-4 minutes each side.
Serve with thin cucumber strips and garnish with parsley.
They were gone in less than 10 minutes! Well…I must confess that I was eating all by myself, then my boyfriend came and claimed his part…
