Mushroom, leek and Marsala pie



I got this unusual recipe from a french acquaintance and I just had to veganize it for Christmas! My omnivore family loved it.

Ingredients (serves 3)

250 gr puff pastry

1/2 tbs olive oil

1 leek, sliced

180 gr sliced mushrooms

30 gr dried cranberries

2 tbsp Marsala wine (or similar fortified wine)

2 tbsp soy cream


Heat up olive oil in a large pan. Fry the leek for 2 or 3 minutes. Add mushrooms and cook over medium heat for another 5 minutes. Add cranberries, Marsala and soy cream, blend well and cook for 2-3 minutes. Allow to cool.

Lay puff pastry on a baking pan covered with parchment paper, spread the filling and close the pie. Brush pastry with a bit of soy milk or soy cream. Pierce with a fork to allow the steam to escape.

Bake in a pre-heated oven at 220° for 15° minutes.
