Polenta wraps with carrot cream
Ingredients for 1 wrap:
50 gr instant pre-cooked polenta flour
water
1 pinch of salt
pepper
Ingredients for the filling:
4 carrots
200 gr tofu
olive oil
salt
parsley
sesame
Preparation:
Grate and steam the carrots until slightly cooked (you don’t want to get them too mushy). Blend them with tofu, a pinch of salt and a bit of olive oil and put aside.
In a bowl, whisk polenta flour, salt and pepper with just enough water to get a thick batter. Grease a large pan with a bit of olive oil and heat it up. Pour the batter in the middle of the pan and spread it in a circle. Let it cook for a couple of minutes and flip it around (I’ll let you choose your own tried-and true trick here! :wink:). Cook for another 2 minutes, lay on a plate, spread the carrot filling, sprinkle with fresh parsley and sesame and wrap into a roll.
