Orecchiette with tomatoes and tofu
This is a recipe that wants to look and taste like the italian ricotta and pomodorini pasta. Once it’s in your plate you won’t tell the difference.
Ingredients:
wholemeal small pasta, you can use orecchiette or gnocchetti
cherry tomatoes
Tofu-ricotta sauce
Olive oil
Basil
Method:
For the white tofu-ricotta sauce I used a herby spreadable tofu but you can make your own if you wish: process the tofu with some herbs, a little water, olive oil and a few capers if you like them.
Add more salt or capers according to taste.
When the pasta is ready stir in the tofu-ricotta add the chopped tomatoes and fresh basil leaves. This is so much like a typical southern italian dish…. enjoy!
