Beetroot burgers


Ingredients (for about 10 burgers):

4 beetroots
1 potato
1/2 onion
3 Tblsp of chickpea flour
3 Tblsp of wheat flour
2 Tblsp of potato starch
breadcrumbs at will
1/2 teaspoon of cumin powder
extra virgin olive oil
sea salt (whole, with herbs,etc, at will!)

Boil the potato and the beetroots (if chopped they take approximately 30 minutes, less if you use the pressure cooker). When cooked, whisk the beetroots together with the onion, to get something like a cream. Mash the potato and add all the other ingredients, to get a mixture like this:

Try to give it the shape of a burger with your hands (I used a little bit of wheat flour to do it, because the mixture was a little sticky) and add breadcrumbs to thicken it. These are the burgers before entering the oven:

Cover the surface with a bit of oil and put them in the oven at 220°C ( 420°F) for 30 minutes.
Turn them upside down  once while cooking.

    Wow, these beetroot burgers were my dinner today: they are amazing! I cooked them in a pan instead than in the oven and they were simply delicious :)! They didn’t even break! Thank you very much for this recipe!
