Onigiri!

Last year I tasted a vegetarian sushi… it was love at first sight!!! (I never tried sushi before…). So now I like to cook japanese food from time to time…

Ingredients:
3 cups (500 gr) of japanese rice (sushi rice)
3 1/4 cups water (600 ml)
1/3 cup rice vinegar (70 ml)
3 Tbsp of white sugar
1 tsp salt
strips of dried Nori

Method:

1)Wash the rice for at least ten minutes until the water runs fairly clear when draining (the rice will release the starch).
2)Let the rice soak in water at least 40 minutes
3)Put the rice in a pot with the 3 1/4 cups of water. Cover the pot with a lid and bring to boil on medium heat. Turn the heat down to low and cook for 15 minutes, or until the water is almost gone. Resist the temptation to lift the lid while the rice is cooking!!!
4)Remove your pot from the heat and let stand covered for other 15 minutes.
5)In the meantime prepare the rice vinegar: mix vinegar, sugar and salt together in a small saucepan. Heat the mixture until the sugar dissolves, stirring frequently. Remove from heat and let your sushi vinegar cool to room temperature.
6)Spread the hot steamed rice into a large plate or a large bowl and add the vinegar solution slowly.Be careful not to smash the rice.
When the rice is cold, wash your hands and leave it wet. Rub palms with salt. Take a handful of rice and ball with hands, using the palm of a hand to form the base, filling with your favourite stuffing, and use the palm and fingers of the other hand to form the sides of a triangle, or a circle, or a ball!
Wrap the rice with a strip of Nori.

Examples of Stuffing:

– Striped ginger boiled for 15 minutes (or cook with steam, but is very “spicy”!)

– Mushrooms and seitan cooked in soy sauce , minced ginger and parsley (you can also use the water in which you boiled the ginger.. or  you can drink this water! very good if you have a cold 🙂 )

– Tofu and Kombu seaweed cooked as the seitan

– Chickpea omelette with vegan mayonnaise

– Grilled vegetables with vegan creamy cheese

– Raw white Daikon radish (a japanese root)

– Candy onion
