Rice Biscuits
Rice flour always scares me a bit, sometimes it can be hard to bind, but you just have to be a bit careful and everything works!
Ingredients:
250 gr. rice flour
70 gr. sugar
1 teaspoon baking powder
1 / 2 teaspoon baking soda
Little orange zest powder
4 tablespoons oil (30 gr)
Water (between 80 and 120 ml, 120 I think!)
Method:
Sift and mix the flours with the orange zest powder then add the oil and water, until mixture is firm and fairly compact. Roll into balls on a baking tray on a greaseproof paper, flatten with your fingers and bake at 180 ° for 20-25 minutes.
Their scent is magical! And they’re gluten-free biscuits: what more could you ask? That they are also low in calories? Well, do not ask too much!
They are approx. 55 kcal per biscuit and that’s not bad either!

picture is great! and I’m sure these cookies were great as well! I think that, when using rice flour, cookies come out lighter and a sort of fresher, I’m not sure I can explain…anyway, I like them 🙂
And, besides personal tastes…I think that wheat whould be avoided as much as we can – not good at all for our guts! Rice is definitely better
