Crunchy Eggplants

Ingredients (for 2 people):

2 big eggplants
2 garlic cloves
rosemary
breadcrumbs at will
olive oil
salt (better if with herbs)
black pepper

Directions:
Wash and chopped the eggplants. If you have time, leave them in a colander with salt to allow the water to go out… put in a baking pan, add garlic, rosemary, salt, pepper and oil (as much as they are quite oiled) and mix well. Sprinkle breadcrumbs on and put into the oven for 30 mins at 200°C (390 °F). Remove from the oven when they are crunchy! They seems potato chips!
