Chickpeas with ginger
Ingredients:
cous cous
dried chickpeas soaked overnight
1 carrot
1 onion
1 clove of garlic
mild oil
hot water
salt
pepper
paprika
ginger
parsley
saffron
Method:
Boil the chickpeas with the carrot, onion and garlic for 1h and a half in a pressure cooker.
Prepare the cous cous as usual with some saffron dissolved in boiling water.
Once the chickpeas are done, process the carrot, onion, garlic and some chickpeas with a blender, add salt, pepper, paprika and ginger.
Sauté in a little oil this chickpea sauce and the whole chickpeas and cook for a couple of minutes. Cover the cous cous and add some fresh parsley.
