Polenta with Mushrooms

Ingredients:
(you decide the quantity)
cornmeal for polenta
water
mushrooms
chopped onion
parsley
salt
pepper
extra virgin olive oil
vegan cheese

Method:
Thouroughly wash and slice the mushrooms. Meanwhile cook the chopped onion in a little water, when it becomes soft add the sliced mushrooms, parsley, salt, pepper and a drizzle of oil.  Let it cook for 15 minutes on a low heat.
In the meantime prepare your melting vegan cheese and set aside.
Once your polenta is ready, pour it onto a serving dish with the mushrooms and the vegan cheese and serve.
It’s really tasty!
